Recipes from the Kitchen of Chef Cher Harris
It’s the most wonderful time of the year, and we want to share some holiday cheer with you! We asked Chef Cher Harris – the International award-winning Executive Pastry Chef at The Hotel Hershey – if she could share a Christmas dessert recipe with our readers.
Chef Cher gave us a recipe for one of her favorite Christmas cookies – Kourabiedes. Kourabiedes are a Greek sugar cookie:
2 pounds unsalted butter
1 cup 10x sugar
2 egg yolks
2 oz ouzo (anise)
2 oz vanilla extract
Paddle butter and sugar for 20 minutes until pale.
Add egg yolk, ouzo and vanilla.
Knead dough until very soft, but not sticky.
Form into crescent moon shape.
Bake at 325° until golden brown.
Toss in 10x sugar.
She also shared a special Winter-Scented Sipping Chocolate recipe:
1/2 cup whole milk
2 cups heavy cream
1 tablespoon cocoa
4 oz sugar
1 teaspoon vanilla extract
1/4 teaspoon coriander
1/4 teaspoon cardamom
1/8 teaspoon cinnamon
1/8 teaspoon clove
1/8 teaspoon white pepper
Simmer all ingredients together.
