Recipe from Hershey, PA for Game Day

Game day is almost here! If you’re hosting a party, this popular burger recipe from The Bears' Den at Hershey Lodge is sure to score a touchdown. Learn how to make it below!

BACON BLACK & BLUE BURGER

Cajun Aioli

1 c. mayonnaise
2 T. cajun seasoning
1 T. hot sauce
1/4 t. lemon juice

In a medium mixing bowl, combine all ingredients and stir until well incorporated. This can be made a day in advance.

Burger

2 lbs. ground beef (chuck or sirloin)
4 t. cajun seasoning
4 oz. blue cheese crumbles
4 large brioche burger buns

Preheat grill or cast iron pan on high heat to 350-400 degrees.

Divide ground beef evenly into four 1-inch thick patties (or six for smaller burgers).

Season burger patties with cajun seasoning on both sides.

Cook burgers on high heat for four minutes per side for medium, longer if you prefer medium-well to well-done. 

During the last two minutes of cook time, top each patty with 1-2 oz. of blue cheese crumbles. While waiting for the cheese to melt slightly, toast sliced brioche buns on the grill until golden brown.

Final Assembly

4 T. cajun aioli
8 strips thick-cut bacon, cooked
1 medium onion, julienne cut and cooked until caramelized
1 medium ripe tomato, sliced 1/4-inch thick
4 fresh green leaf lettuce greens

Placed toasted bottom buns on plate. Top with cooked burger patties.

Top each patty with caramelized onion, 2 slices of bacon, lettuce leaf and a slice of tomato.

Spread 2 t of cajun aioli on the top burger bun. Top the burger and serve.
