Hershey Entertainment & Resorts Partners with the American Culinary Federation for Apprenticeship Program

Hershey Entertainment & Resorts (HE&R) is proud to announce their partnership with the American Culinary Federation (ACF) which launched their inaugural apprenticeship program on Sept. 11.

“I couldn’t be more proud to be involved with this national program,” stated executive chef at The Hotel Hershey, Ken Gladysz. “Being able to provide on-the-job training for our future chefs is a fundamental part of their education, and all of us at Hershey Entertainment & Resorts are honored to teach and guide these students.”

The ACF apprenticeship program was started in 1974 and is a combination of classroom instruction and on-the-job training that helps to mold young culinarians into future chefs. Chef Gladysz and the other chefs of HE&R will train the students to industry standards while helping to develop their culinary skills.

The chefs will work closely with The Hotel Hershey’s former apprentices Robert Corle Jr., CEC, CCE and Brian D. Peffley, CEPC, CCE, AAC, chef instructors. They are the brand ambassadors for the ACF apprenticeship program. Chef Corle was executive chef for the Crystal Café at The Hershey Company and Chef Peffley was executive pastry chef at The Hotel Hershey and are now both chef instructors at Lebanon County Career and Technology Center. Chefs Corle and Peffley began their culinary careers as apprentices, so they both know the true value of this apprenticeship program for both culinary students and HE&R.

“Apprenticeship provided me with hands-on training and the motivation to pursue advanced culinary and pastry skills,” said Chef Peffley. “It is a privilege to align with my former employer and pay it forward by instilling a love for the culinary profession in student apprentices.”

HE&R is excited to open their kitchen doors and looking forward to guiding the students through the apprenticeship program. HE&R operates 20 unique dining venues that include everything from casual coffee shops to late-night cocktails, family-friendly dining to four-star cuisine and everything in between. Culinary events throughout the year include wine dinners; holiday celebrations; Hershey Restaurant Week in spring; The Hotel Hershey Wine & Food Festival in fall; and Chocolate-Covered February, a month-long, town-wide celebration of everything chocolate. Additionally, the culinary team executes small and large-scale banquet and convention dining events year-round.
